Description
This junmai ginjo sake is made by Kamoizumi, the pioneer of junmai sake made from just rice, rice koji, and water. Shusen Honjikomi is the sake that marked Kamoizumi's origin.
Brewed slowly at low temperatures using traditional ginjo-zukuri techniques, it also skips the activated carbon filtration process used in most sake, allowing the full natural flavor of the rice and water to come through. That keeps its naturally pale golden color and gives it a distinctive richness and aroma. Compared to Ryokusen, this sake has a stronger, more powerful structure of rice flavor, acidity, and umami. On the palate, a full expression of rice comes through first, followed by a pleasant acidity that gives the finish a crisp edge.
It won the Platinum Award at the Kura Master sake competition in France, a distinction given only to the top-rated sakes among the gold medal winners, reflecting high praise from French sommeliers and bartenders.
This is a well-balanced, versatile sake. Chilled, it has a clean, refreshing mouthfeel with a light rice sweetness and a crisp finish. Warmed, it reveals more depth, with a mellower flavor and a smoother texture.
It pairs well with tempura and rich Japanese dishes generally, similar to what you'd pair with a crisp white wine: grilled pork with miso, spicy tofu, yakitori chicken with soy sauce, sardine, and mackerel.
