Uji Kabuse "Ujiyama"

Kabuse tea is made by using the leaves which are specifically grow. They use special fabric to cover the tea leaves and keep them in the shade away from sunlight. This process is done approximately one or two weeks before the harvest. This process makes tea leaves rich in theanine which has been recognized as the ''umami'' flavour. As a result, the tea is characterised by its strong umami and sweetness with minimal bitterness. The tea leaves are a vivid and have a shiny deep green colour compared to other tea leaves, making the tea colour itself a beautiful bluish-green.

By brewing the tea at a lower temperature allows you to savour its rich umami and sweetness. On the other hand by brewing the tea with boiling water, the taste is refreshing with a hint of bitterness. When cold-brewed, it offers a refreshingly smooth texture and sweetness. Moreover, once the amount of caffeine release in the tea is reduced, it is perfect for any time of the day.
